Peanut Butter and Rice Crispy Balls

Long time since shared a recipe :S but want to share this one to kick start back the gluten free baking (actually this one doesn’t require any baking)

Peanut butter rice crispy balls!! Yummy and so simple to do! Many thanks to tasty Facebook video for the recipe idea 🙂

Ingredients needed:

1 cup peanut butter (either smooth or crunchy)

1 cup icing sugar

2 cups of rice crispys (I left Uncrushed but I’d crush then 1 cup)

1/2 cup butter

200g milk chocolate

1) Mix both peanut and normal butter

2) Stir in the powdered sugar and rice crispys

3) Roll into a ball and put in fridge for at least 30mins (I left for an hour)

4) Melt the chocolate

5) Dip ball into the chocolate (can use a stick or drop and fork out)

6) Put back in fridge for at least an hour or longer

They don’t last long due to having just the one turn into having more- well they do have a lovely crunch and a rich taste 🙂

Give it a go and let me know what you think!
